Panang Karupatti, or Palm Jaggery, is a traditional unrefined sweetener made from the sap of the palmyra palm tree. Unlike white sugar, it is processed without chemicals, preserving its rich nutritional profile.
Preparation & Varieties:
The sap (called padhaneer) is collected from palm blooms and boiled in large vessels until it thickens and solidifies into blocks or hemispherical shapes using coconut shells.
- Udangudi Karupatti: A famous variety from Tamil Nadu that recently received a Geographical Indication (GI) tag for its unique quality and traditional production method.
- Sukku Karupatti: A version infused with dry ginger (sukku) and pepper, often used in medicinal candies.
How to Identify Pure Karupatti
- Color: Should be deep brown to nearly black.
- Texture: Avoid blocks that are rock-hard; pure jaggery has a slightly softer, grainy texture.
- Aroma: It should have a rich, caramel-like scent.
